Sticky Chilli Jam Chicken Wings
Garnish: fresh coriander, shallots, toasted sesame seeds
Serves: 4
Preheat the oven to 200°C. Line a large baking tray with foil and place a wire rack on top. Pat the chicken wings dry with kitchen paper, the drier they are, the crispier they’ll be.
In a large bowl, toss the wings with olive oil, salt, and pepper until well coated. Arrange them on the rack in a single layer, don’t overcrowd the tray. Roast for about 40 minutes, turning halfway, until they’re golden and crisp and cooked through.
Once the wings are cooked, brush them generously with chilli jam and return them to the oven for another 10 minutes so the glaze sets and becomes glossy. Leave them to cool for a few minutes. Garnish with fresh coriander, shallots and toasted sesame seeds.
